DISHES TO TRY IN JAIPUR
Dal Bathi Churma
This is a combo of three different dishes. The bati is made of flour and immersed in ghee, and has a long shelf life. The churma is a sweet dish consisting of ground wheat crushed and cooked with ghee and sugar. The dahl varies depending on where you're eating, but it also pairs well with the churma and bati. I didn't get a photo myself, but found one on my favourite Indian cooking site Archana's Kitchen. She also has an awesome recipe for this.
Gatta ki sabji
Gatte are basically flour dumplings that are then plopped into spicy curd gravy. Sabji refers to a veg curry that the dumplings are in, don't be confused by sabzee which means vegetables.
Pyaaz ki Kachori
This is a fried pastry filled with a spicy onion filling. The most famous of the Rajasthani snacks, I ate way too many last trip and had a serious acne breakout from it.
